docs: rewrite README for the full triage bot

Documents the full multi-platform triage bot (was: the minimal tag bot).
Keeps the demo-video hero and the docs.copilotkit.ai/slack CTA; adds an
install-pending-publish status callout and a monorepo run path
(pnpm --filter slack-example) as the dependable way to run it today.
